SWEDISH PANCAKES RECIPES & A COWBOY CHRISTMAS CAROL

Today I would like to share a Breakfast Recipe
and Christmas Carol with you.



SWEDISH PANCAKES RECIPE

2 cups milk
4 eggs
1 Tablespoon vegetable oil
1 1/2 cups all-purpose flour
3 Tablespoons sugar
1/4 teaspoon salt

Lingonberries or raspberries
Seedless raspberry jam
or fruit spread, warmed

Whipped topping

In a blender, combine the first six ingredients.
Cover and process until blended.
Heat a lightly greased 8-in. nonstick skillet;
pour 1/4 cup batter into center of skillet.
Lift and tilt pan to evenly coat bottom.
Cook until top appears dry; turn and cook 15-20 seconds longer.
Repeat with remaining batter, adding oil to skillet as needed.
Stack pancakes with waxed paper or paper towels in between.
Reheat in the microwave if desired.

Fold pancakes into quarters.
serve with berries, seedless jam and whipped topping.

Tall in the saddle we spend Christmas day
Driving the cattle on the snow-covered plains.
All of the good gifts given today;
Ours is the sky and the wide open range.

Back in the cities, they have different ways,
Football and eggnog and Christmas parades.
I'll take the blanket; I'll take the reins;
Christmas for Cowboys and wide open plains.

A campfire for warmth as we stop for the night;
The stars overhead are the Christmas-tree lights.
The wind sings a hymn as we bow down to pray;
Christmas for Cowboys and the wide open plains.

It's tall in the saddle we spend Christmas Day,

OLD FASHIONED CHRISTMAS LOG RECIPE



OLD FASHIONED CHRISTMAS LOG RECIPE

1 box vanilla wafers *
1 can dime brand or eagle brand milk
2 tablespoons butter
1 cup chopped walnuts

Mix all ingredients together.
Place on wax paper and form a log.
Chill for 2 to 4 hours and then cut log into rounds.
(This will make 2 logs)


* food processor works well on the vanilla wafers ---
"it should be like powder".
