HOLIDAY MENU FEATURING KENTUCKY BAKED HAM with BOURBON GLAZE



KENTUCKY BAKED HAM
with BOURBON GLAZE RECIPE

1 12 to 14 pound smoked ham
Cloves

Glaze:
1 cup bourbon
2 cups molasses
1 tablespoon peppercorns


Remove skin from ham, leaving 1/4 to 1/2-inch of fat on ham.
Score the fat into diamond shapes and insert cloves in a decorative manner.
In a saucepan, bring bourbon, molasses, and peppercorns
to a simmer, to cook off the alcohol – Careful, the alcohol will flame a little.
Allow to cool.
Put ham on a rack in a baking pan, add 1-inch of water,
baste with the glaze and bake in a preheated 350 degree oven.
Depending on weight of the ham, the time will vary.
It will take approximately 20 minutes per pound.
Bake for 3 hours covered and last 1/2 hour uncovered,
basting every 20 minutes with glaze.






ORIGINAL GERMAN HOT POTATO SALAD RECIPE

9 med. potatoes - peeled, sliced
1 large onion - sliced thin
1 Lb. bacon - prepared, crumbled, grease reserved
1/2 cup flour
2 1/4 cups water
1 1/4 cups white vinegar
1/2 cup granulated sugar

Boil potatoes until soft.
Combine crumbled bacon, potates, and onion in a bowl. Set aside.
Melt bacon grease in saucepan and stir in flour.
Heat until bubbly.
Add remaining ingredients and cook until smooth and bubbly.
Once sauce has thickened, pour over potato mixture.

NOTES : Serve hot!








Boarding House Biscuit Recipe

3 cups flour
2 Tablespoons sugar
1 Tablespoon plus 1-1/2 teaspoon baking powder
3/4 teaspoon cream of tartar
1/4 teaspoon salt
1/4 cup shortening
1 egg, beaten
3/4 cup milk

Combine flour, sugar, baking powder,
cream of tartar, and salt, mix well.
Cut in shortening with a pastry blender until
mixture resembles coarse meal.
Combine egg and milk and then add to flour mixture,
stirring until dry ingredients are moistened.
Turn dough out on lightly floured surface.

Knead 8 or 10 times.
Roll dough to 1-inch thickness; cut with biscuit cutter.
Place on ungreased baking sheet.
Bake at 450 degrees for 15 minutes or until golden brown.

Makes: app ~ 15 biscuits
