KENTUCKY THUMBPRINT COOKIES USING KENTUCKY SEEDLESS BLACKBERRY & PEACH JAM

Let's try some new recipes this month.

A few weeks ago while at a local store, looking for grape jelly for my
lil smokies recipe, I stumbled across a brand of Jam
made right here in Kentucky.

I purchased 2 jars;
1 Seedless Blackberry Jam and 1 Peach.
In addition to serving it with toast and hot biscuits
I am going to make a batch of thumbprint cookies.
I have never tried them before. I have always wanted to
try homemade thumbprints, but I am a little leary to try
a new recipe, especially if I have to buy special ingredients.

Here is an old recipe I found years ago,
for these delightful hand molded cookies.
I think I am going to give them a try
this week.



KENTUCKY THUMBPRINT COOKIES

1 cup butter or margarine, softened
1/2 C packed brown sugar
2 eggs
1/2 tsp vanilla
2 1/2 Cups reg flour
1/4 tsp salt
1 1/2 Cups finely chopped walnuts
3-4 Tablespoons jelly or jam - your favorite flavor
*I am going to do 1/2 the cookies with the
Seedless Blackberry Jam and the other half Peach.

In a large bowl, beat butter and sugar until creamy.
Separate eggs.
Place whites in a small bowl, lightly beat, and set aside
then beat yolks and vanilla into butter mixture.
In another bowl, stir together flour and salt.
Add to butter mixture, blending thoroughly.
With your hands, roll dough into 1 inch balls
Dip each ball in egg whites then roll in walnuts.
Place on greased baking / cookie sheets.
With either your thumb or the tip of a small spoon,
make an indentation
right in the center of each ball.
Neatly fill each indentation with about 1/4 tsp of jelly or jam.

Bake in a preheated oven 375 for 12-13 minutes or
until lightly browned
Let Cool on baking sheet for about a minute,
then move to wire racks for complete cooling.
Store in an airtight container.

makes approximately 40-42 cookies
