CROCK POT PORK CHOPS SCALLION MASHED POTATOES BUTTER CREAM BISCUIT RECIPES

Today's Menu:

Crock pot Pork Chops
Bacon Scallion Mashed Potatoes
White Corn
Butter cream biscuits
dessert: fresh orange wedges


CROCK POT / SLOW COOKER PORK CHOPS

4 to 6 bone-in pork chops
1/4 seasoned pepper
1/4 salt
abt 1/2 tsp minced garlic
1 tsp of bacon drippings
1 Envelope (1oz) dried onion soup mix
1 Envelope (1oz) pork gravy mix
3 cups Water


Place chops in slow cooker.
Add seasonings, soup and gravy mixes and water.
Cover and cook on low 6 to 8 hours.

BACON SCALLION MASHED POTATO RECIPE

2 pounds potatoes, peeled and cut into 1-inch cubes
4 cloves garlic, peeled
5 strips bacon, cut into 1/2-inch pieces
1 cup thinly sliced scallions
1/2 cup low-fat milk, warmed
1/2 cup low-fat sour cream
1 tsp salt
1/4 tsp black pepper


In a large pot, cover potatoes and garlic with lightly salted water.
Boil until potatoes are fork tender.
Fry bacon in skillet until crisp; drain on paper towels.
Pour out all but 1 teaspoon bacon grease from pan.
Add scallions to grease, cook until soft, but not brown.
Add bacon.

Drain potatoes and return to pot.
Mash potatoes with milk, sour cream, salt, and pepper.
Stir in bacon and scallions.

Reheats well

WHITE CORN
Canned / store bought

WHOLE KERNAL CORN tip:
Whether using white, yellow or mixed corn:
I always drain the corn,
place in a small saucepan
add a little salt
add some butter
just heat thoroughly and you are done.

BUTTER CREAM BISCUITS RECIPE

2 sticks unsalted butter
8 ounces sour cream
2 cups unsifted self rising flour

Melt butter and cool to room temperature.
Stir in sour cream until creamy and smooth
Stir in flour
Blend Well.

Spoon into greased muffin cups,
filling 2/3 full.
Bake at 350 degrees until golden brown, about 25 to 30 minutes.
Makes 24 medium biscuits.

options:
Make shortcakes by adding 1/3 cup of sugar to the flour
before stirring it into the butter/cream mixture.

You can pat the dough out on a floured board and cut
with a large biscuit cutter to make larger shortcakes.
Bake on ungreased baking sheet until golden brown.

Good hot or cold.
